In the backwoods of Minnesota (and I’m sure most other states) hunters, farmers and fishermen make a wide variety of sausages, hams, smoked fish, pickled fish, and some very strange but delicious ethnic delicacies from the homelands of their ancestors. It often shared at holidays and/or community or church gatherings. It is good that some city folk try to reignite the traditions.

Food can be good.

I know people who do this in NYC. I’ve had macaroni & cheese sausage, among other delicacies.
